We celebrated African Heritage Month with this African-themed menu:

Jollof Rice, a dish from West Africa


We served our Jollof Rice with roasted squash

We had double dessert:


Akwadu, a banana coconut bake that is enjoyed for breakfast or dessert in Ghana and Equatorial Guinea, and Almond Cookies.  We whipped up some coconut cream to top it off.
