Rustic Hummus

You don’t need a blender or food processor to make hummus, as long as you don’t mind it a bit lumpy.  Just mash it with a potato masher until it’s the texture you like (or your arms give out).  At Supper Club, we have lots of people to take turns mashing.

Serves 4

Kitchen equipment

  • Large bowl
  • Knife & cutting board
  • Garlic press or micro grater
  • Sieve or strainer
  • Potato masher
  • Measuring cup, measuring spoons
  • Juicer
  • Stirring spoon


• 1 19 oz. can chickpeas, drained and rinsed, or 1 1/2 to 2 cups cooked chickpeas
• 1 medium garlic clove, minced
• 3/4 tsp salt
• pinch cayenne pepper
• freshly ground black pepper
• juice from 1 lemon (2 to 3 Tbsp)
• 1/4 cup tahini
• 1/4 cup extra virgin olive oil
• 1/4 cup water


Put all ingredients in a bowl and mash vigorously until everything is well blended and the hummus is the texture you like. Taste, and adjust seasonings if needed.
